Final Four Snack

My husband's favorite time of year is here...The Final Four! We decided to have a few friends over to watch the games. I wanted to find something for everyone to snack on that wouldn't make us feel miserable by the end of the night, especially since swimsuit season is upon us. The other night we made sweet potato chips, and they were delicious! So we decided that would be one of our grazing foods for the game.

Start by preheating the oven--we set ours around 475 degrees. Just thinly slice the sweet potatoes into medallions (we used three sweet potatoes), and place them on a pan in a single layer. Try not to overlap them too much because they will not crisp up as nicely.

Next, drizzle some olive oil, salt and pepper and thyme. Mix until all the pieces have been coated. 

Place in the oven for about 30 minutes. I checked them every 10 minutes and flipped them half way through so they would cook evenly. (please excuse the condition of our oven--I'm pretty sure it is from the 70s!)

Once done, I let them sit on the pan for about 5-8 minutes. Scoop them into a bowl and serve alone or with a condiment of your choosing! We used good old fashion ketchup. 

Simply, light and delicious! They were all gone by the end of the night!
